  • 225 g (1 3/4 cups) plain/all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) regular sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs (lightly beaten)
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 170°C (325°F). Grease and line a loaf tin with parchment paper.
  2. In a bowl, sift together the flour, baking powder, and salt.
  3. Cream the softened butter and sugar until light in color, about 3-5 minutes.
  4. Gradually add the beaten eggs and vanilla extract while mixing on low speed.
  5. Alternately mix in the flour mixture and milk until just combined.
  6. Pour the batter into the prepared loaf tin and smooth the top.
  7. Bake for 1 hour to 1 hour and 5 minutes, checking doneness with a skewer.
  8. Cool in the tin for about 10 minutes before transferring to a wire rack.
