  • 2 medium chicken breasts
  • ½ cup buttermilk
  • 1 tablespoon hot sauce
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon cayenne pepper
  • Burger buns (toasted)
  • Coleslaw
  • Mayonnaise
  • Pickles

Instructions

  1. Slice chicken breasts in half horizontally into 4 cutlets. Season with salt and pepper.
  2. In a bowl, whisk together buttermilk and hot sauce. In another bowl, combine flour, cornstarch, cayenne, garlic powder, salt, and black pepper.
  3. Dredge chicken cutlets in the flour mixture, then dip in the buttermilk mixture followed by the flour mixture again for double-breading.
  4. Heat oil in a pan to 350ºF and fry chicken for about 3 minutes per side until crispy. Transfer to a cooling rack.
  5. For the hot sauce, mix hot oil with brown sugar and spices. Baste fried chicken with this mixture.
  6. Assemble sandwiches by spreading mayonnaise on toasted buns, adding fried chicken, coleslaw, and pickles.
