  • 32 Lotus Biscoff cookies (approximately 8.8 ounces)
  • 1 (10-12 ounce) package white chocolate, finely chopped
  • 2 tablespoons Biscoff cookie butter (optional for decoration)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a food processor, pulse the Biscoff cookies into fine crumbs.
  3. Melt 1/4 cup of cookie butter in a microwave-safe bowl for 15-20 seconds.
  4. Combine melted cookie butter, softened cream cheese, and cookie crumbs in the food processor; pulse until well mixed into a thick dough.
  5. Roll the dough into 1-inch balls and place them on the lined baking sheet. Chill in the fridge for at least an hour or freeze for about 20 minutes.
  6. Melt the white chocolate in a microwave-safe bowl using 30-second intervals until smooth.
  7. Dip each chilled truffle into the melted white chocolate and return to the baking sheet.
  8. Chill again until the chocolate is set. Optionally drizzle with additional melted cookie butter before serving.
