  • 1/2 cup evaporated milk
  • 2 cups brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups shredded coconut
  • 1 tsp flaked sea salt
  • 1/2 cup corn syrup
  • 1/2 cup unsalted butter

Instructions

  1. In a large saucepan, combine evaporated milk, brown sugar, corn syrup, granulated sugar, and unsalted butter. Stir over medium heat until melted.
  2. Bring to a boil without stirring for about 3 minutes until reaching a temperature of 235°F (softball stage).
  3. Remove from heat and stir in vanilla extract.
  4. Add pecans and shredded coconut, stirring until thickened (about 3-5 minutes).
  5. Allow to cool slightly before scooping onto parchment-lined baking trays.
  6. Sprinkle with flaked sea salt and let cool completely before serving.
