  • 4 oz cream cheese (softened)
  • 2 Tbsp powdered sugar
  • 1/3 cup pumpkin puree
  • 2 cups graham cracker crumbs
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 cups white chocolate chips
  • 12 tsp coconut oil (optional)

Instructions

  1. In a stand mixer or large bowl, beat cream cheese and powdered sugar until creamy (about 2-3 minutes).
  2. Mix in pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until well combined. Stir in the remaining graham cracker crumbs.
  3. Chill the mixture in the refrigerator for at least 30 minutes.
  4. Line a baking sheet with parchment paper. Scoop out about 1 tablespoon of dough and roll it into a ball; place on the prepared sheet.
  5. Refrigerate again for another 30 minutes.
  6. Melt white chocolate chips in short bursts in the microwave until smooth; dip each pumpkin ball into the chocolate and return to the baking sheet.
  7. Drizzle any remaining melted chocolate over the balls, then chill again until set.
