  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 6 cups Sugar (divided)
  • 1 1/2 cups Chopped Walnuts or Pecans
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. Melt 2 cups of sugar in a heavy-bottomed saucepan over low heat for about 20 minutes.
  3. In another large saucepan, combine the remaining sugar with heavy cream and simmer on low heat.
  4. Once the initial sugar melts, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the temperature reaches 244°F (softball stage).
  6. Remove from heat and stir in baking soda, butter, and vanilla until smooth.
  7. Allow to rest for 20 minutes before mixing in chopped nuts.
  8. Transfer to the prepared baking dish and cool completely before slicing into squares.
