  • 1 pound dried navy beans
  • 8 oz thick-cut bacon
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1/2 cup tomato sauce or ketchup
  • 1/4 cup molasses
  • 1/2 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • 2 tsp Worcestershire sauce
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 bay leaf

Instructions

  1. Soak navy beans overnight in water.
  2. Drain and boil in fresh water for 1 hour; drain and reserve cooking liquid.
  3. In a Dutch oven, fry diced bacon until crisp.
  4. Add chopped onion and cook until soft; stir in minced garlic.
  5. Mix tomato sauce, molasses, brown sugar, vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper, and bay leaf into the pot.
  6. Combine pre-cooked beans with the mixture and add reserved cooking liquid. Simmer briefly.
  7. Cover and bake at 325°F (160°C) for 2 to 3 hours; remove lid last 30 minutes to thicken.
