Ingredients

Scale
  • 3 medium extra ripe bananas (mashed)
  • 1 cup granulated sugar
  • 1/3 cup canola oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/3 cups all-purpose flour (sifted)
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9X5 loaf pan with nonstick spray and line it with parchment paper.
  2. In a large bowl, mash the ripe bananas using a fork until smooth. Stir in the sugar until well combined.
  3. Add the eggs, vanilla extract, and canola oil to the banana mixture; mix until blended smoothly.
  4. In a separate bowl, sift together the flour, baking soda, and salt. Gradually fold this dry mixture into the wet ingredients until just combined—do not overmix.
  5. Pour the batter into your prepared loaf pan and bake for 45-50 minutes or until a toothpick comes out clean from the center.
  6. Allow to cool in the pan for several minutes before transferring to a wire rack to cool completely before slicing.
