  • 1 1/3 cups ground almonds
  • 2 1/2 cups all-purpose flour (or gluten-free blend)
  • 3 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup raspberry jam
  • Vegan cream cheese frosting

Instructions

  1. Preheat oven to 350F and prepare two 8-inch cake pans with parchment paper.
  2. In a large mixing bowl, whisk together sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until smooth.
  3. Add ground almonds, flour, baking powder, baking soda, and salt. Gradually pour in the vegan buttermilk and whisk until combined.
