  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls (ciliegine)
  • 2 tbsp olive or avocado oil
  • 2 garlic cloves, minced
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, salt, and pepper.
  3. In another bowl, combine halved tomatoes and mozzarella; season with salt and pepper.
  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear in the skillet until golden brown on each side (1-2 minutes).
  5. Pour balsamic sauce over chicken; simmer briefly. Layer tomato and mozzarella mixture on top.
  6. Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F (75°C). Let rest for 5 minutes before serving.
