  • 1 tbsp Olive Oil
  • 4 tbsp Butter
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 Yellow Onion, diced
  • 67 Garlic Cloves, minced
  • 1 lb Andouille Sausage, sliced
  • 14.5 oz Can of fire-roasted diced tomatoes
  • 1 cup Half and Half (or Milk)
  • 3 cups Chicken Broth
  • 12 oz Bow Tie Pasta
  • 8 oz Sharp Cheddar Cheese, grated
  • 8 oz Pepper Jack Cheese, grated

Instructions

  1. Heat olive oil and butter in a large pan over medium heat. Sauté diced bell peppers and onion for about 5 minutes.
  2. Push vegetables to one side of the pan and add sliced Andouille sausage to the empty side. Cook until browned; stir in minced garlic for an additional minute.
  3. Add fire-roasted tomatoes, half-and-half (or milk), chicken broth, and bowtie pasta. Ensure pasta is submerged in liquid.
  4. Bring to a gentle boil, cover with a lid, reduce heat to simmer, and cook for 15-20 minutes until pasta is tender.
