  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • Juice of 1 lime
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves, crushed
  • 8 small corn or flour tortillas
  • Small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed

Instructions

  1. In a medium mixing bowl, whisk together lime juice, chipotle paste, honey, tomato puree, salt, and crushed garlic. Add chopped chicken thighs and toss to coat. Let marinate while preheating the oven to 200°C (400°F).
  2. Spread the marinated chicken on a baking tray and top with pineapple chunks. Roast for 30 minutes until fully cooked.
  3. Prepare toppings by chopping shallots and cubing avocados.
  4. Once cooked, squeeze additional lime juice over the chicken and pineapple mixture. Serve in warmed tortillas topped with coriander and avocado.
