Ingredients

  • 1½ cups dry orzo pasta
  • 2 Persian cucumbers
  • 2 cups cherry tomatoes
  • 1 cup cooked chickpeas
  • 4 ounces feta cheese
  • ⅓ cup red onion
  • ½ cup Kalamata olives
  • Fresh basil or mint leaves
  • Greek Salad Dressing

Instructions

  1. Cook the orzo in salted boiling water according to package instructions until slightly past al dente. Drain and cool on a baking sheet.
  2. In a bowl, mix Greek Salad Dressing with red wine vinegar, lemon juice, oregano, and sea salt.
  3. In a large bowl, combine the cooled orzo with cucumbers, tomatoes, chickpeas, feta cheese, red onion, and olives. Drizzle dressing over the salad.
  4. Toss in half of the fresh herbs and season with black pepper. Garnish with remaining herbs before serving.
