  • 6 skinless, bone-in chicken thighs
  • 1 1/2 cups long-grain rice (basmati or jasmine)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups hot vegetable or chicken stock
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C).
