  • 5 bone-in chicken thigh fillets (skin removed)
  • 1 onion (chopped)
  • 2 large garlic cloves (minced)
  • 2 tablespoons butter
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • 1 ¼ cups hot water
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • Black pepper (to taste)

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a baking dish, scatter chopped onion and minced garlic; place butter in the center and bake for 12-15 minutes.
  3. While it bakes, mix chicken rub ingredients and season both sides of chicken thighs.
  4. Stir uncooked rice into the baked onion mixture.
  5. Arrange seasoned chicken on top of rice; pour hot broth and water evenly around it.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil; optionally spray oil on chicken for a golden finish and bake uncovered for an additional 20 minutes.
  8. Let stand for 5 minutes before serving.
