  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • ⅔ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 lb boneless, skinless chicken breasts

Instructions

  1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, mix melted butter, olive oil, and garlic powder until smooth. In another bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, kosher salt, and black pepper.
  3. Butterfly the chicken breasts into cutlets for even cooking.
  4. Dredge each cutlet in the butter mixture then coat with the breadcrumb mixture.
  5. Place the coated cutlets on the prepared baking sheet and bake for 20 minutes, flipping halfway through until golden brown and an internal temperature of 165°F (74°C) is reached.
  6. Garnish with parsley or basil if desired and serve immediately.
