  • 1 lb lean ground beef
  • 1 tablespoon olive oil
  • 2 medium carrots, diced
  • 1 large onion, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 carton (32 oz) chicken broth
  • 1 can (15 oz) Great Northern beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup ditalini pasta
  • Seasonings: Italian seasoning, salt, black pepper

Instructions

  1. In a large pot over medium heat, heat olive oil and brown the ground beef for about 3–5 minutes.
  2. Drain excess fat and set aside the cooked beef. In the same pot, sauté carrots, onion, celery, and garlic for about 4 minutes until softened.
  3. Add the browned beef back into the pot along with diced tomatoes and tomato sauce; stir to combine.
  4. Pour in Great Northern beans and kidney beans with chicken broth; let simmer for about 10 minutes.
  5. Stir in ditalini pasta along with Italian seasoning, salt, and pepper; cook for another 10 minutes until pasta is tender.
  6. Serve hot, garnished with fresh basil or Parmesan cheese if desired.
