  • 4 pounds multi-colored rotini pasta
  • 64 ounces Italian dressing
  • 32 ounces mozzarella cheese (cubed)
  • 40 ounces cherry tomatoes (halved)
  • 6 bell peppers (3 green and 3 red, diced)
  • 36 ounces sliced black olives (drained)
  • Kosher salt and black pepper for seasoning

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large bowl, combine half of the cooked pasta with half of the Italian dressing, salt, pepper, mozzarella cheese, cherry tomatoes, bell peppers, and olives. Mix well.
  3. Repeat with the remaining ingredients.
  4. Store in large foil pans and refrigerate until ready to serve.
