  2. Place the bowl over the pot without touching the water and whisk until the mixture reaches 113°F.
  3. Transfer to a stand mixer and whip on high speed for about 5 minutes until thickened and shiny, forming medium-soft peaks.
  4. Prepare a piping bag with gel colors for festive swirls, then fill it with meringue.
  5. Pipe onto lined baking trays in desired shapes, spacing them evenly.
  6. Bake at 200°F for about 80 minutes, rotating trays every 20 minutes until crisp throughout.
  7. Allow cooling; sprinkle with edible stars if desired before serving.
