  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this to the wet mixture to form a smooth dough.
  5. Scoop about 2 tablespoons of dough, flatten into discs, and place half on the prepared baking sheet.
  6. Add about 1 teaspoon of jelly in the center of each disc.
  7. Top with another disk of dough, sealing the edges securely.
  8. Bake for approximately 12-15 minutes until golden around the edges.
  9. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
