  • 12 tbsp light agave nectar (or preferred sweetener)
  • 1.5 tsp pure vanilla extract
  • 2 cups fresh peaches (sliced)
  • 0.5 cup fresh blueberries
  • Vegan butter and organic cane sugar (for topping)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry into a 13”x9” rectangle on a floured surface, leaving a 1-inch border.
  3. Mix softened cream cheese, agave nectar, and vanilla in an electric mixer until smooth.
  4. Spread cream cheese mixture on the pastry, keeping the border clear, then top with sliced peaches and blueberries.
  5. Bake for 25-30 minutes or until golden brown. Allow to cool slightly before serving.
