  • 1/2 cup peeled and shredded carrots
  • 3/4 cup mayonnaise
  • 1/3 cup rice vinegar
  • 1/4 cup sugar
  • 2 tablespoons dill pickle juice
  • 1/3 cup diced dill pickles
  • Salt and cayenne pepper to taste

Instructions

  1. In a large mixing bowl, combine the shredded cabbage and carrots.
  2. In another bowl, whisk together the mayonnaise, rice vinegar, sugar, dill pickle juice, salt, and cayenne pepper until smooth.
  3. Pour the dressing over the cabbage mixture and add the diced dill pickles. Stir well to coat all ingredients evenly.
  4. Transfer the slaw to the refrigerator and let it chill for at least two hours before serving.
