  • 1 cup Unsalted Butter, room temperature (2 sticks)
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 cup Granulated Sugar
  • 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
  • 2 1/4 cups Granulated Sugar
  • 6 Tablespoons All-Purpose Flour
  • 6 Eggs
  • 3 Lemons, Juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" x 13" baking pan and line it with parchment paper.
  2. To make the crust, combine butter, flour, salt, and sugar until smooth. Press into the prepared pan and bake for 15–20 minutes until golden.
  3. While the crust bakes, prepare raspberry puree by blending raspberries with water and straining out the seeds.
  4. In another bowl, mix sugar and flour; whisk in eggs and lemon juice, then fold in raspberry puree until lightly pink. Pour over the baked crust.
  5. Bake for 25–30 minutes or until edges are set but center remains slightly wobbly. Cool completely before slicing.
