  • 2/3 cup brown sugar substitute
  • 1 large egg (or egg substitute)
  • 1/2 cup vanilla protein powder
  • Optional: 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 180C/350F and line a cookie sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, brown sugar substitute, egg, and vanilla protein powder. Add chocolate chips if desired.
  3. Mix until well combined and form into 12 cookie dough balls on the lined sheet.
  4. Flatten each ball slightly and bake for 12-14 minutes until edges are golden.
