  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. For the cream cheese filling: Whip together softened cream cheese and sugar until fluffy. Add egg and vanilla; mix until smooth.
  3. For the crumb topping: Combine brown sugar, granulated sugar, flour, cinnamon, and salt; drizzle in melted butter and mix until crumbly.
  4. For the pumpkin cake batter: In one bowl, whisk dry ingredients. In another bowl, blend pumpkin puree, sugar, melted butter, eggs, and vanilla. Combine wet and dry ingredients gently without overmixing.
  5. Layer half of the batter in the pan, spread cream cheese filling on top, dollop remaining batter over it and swirl gently. Sprinkle crumb topping.
  6. Bake for 35-40 minutes or until a toothpick comes out clean from the center. Allow cooling before slicing.
