  • 1 1/2 cups vegetable oil

  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon (or more, as needed) purple food coloring
  • 1 pound cream cheese, softened
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 4 cups confectioners’ sugar, sifted

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In one bowl, sift flour, sugar, baking soda, salt, and cocoa powder. In another bowl, whisk together oil, buttermilk, eggs, food colorings, vinegar, and vanilla until smooth.
  3. Gradually combine dry ingredients with wet ingredients until smooth.
  4. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  5. Cool cakes for 10 minutes in pans before transferring to wire racks.
  6. For the frosting: Beat cream cheese and butter until creamy; gradually add sifted sugar until fluffy.
  7. Once cakes are cooled completely, frost between layers and on top.
