  • ⅓ cup powdered sugar
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2¼ cups all-purpose flour
  • ¼ teaspoon kosher salt
  • ½ cup seedless raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a jumbo muffin pan.
  2. In a mixing bowl, cream together softened butter, powdered sugar, granulated sugar, vanilla extract, and almond extract until light and fluffy.
  3. Gradually add flour and salt; mix until just combined.
  4. Scoop about ¼ cup of dough into each muffin well and press to form a base. Reserve some dough for topping.
  5. Add approximately 1 tablespoon of raspberry jam into each cookie cup.
  6. Sprinkle reserved dough over the jam layer.
  7. Bake for 18–22 minutes or until golden brown on top.
  8. Allow cooling completely in the pan before removing.
