  • 1 ½ teaspoons sesame oil
  • 1 tablespoon (3 teaspoons) neutral oil (like avocado or canola oil)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon butter
  • 2 teaspoons fresh lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon neutral oil
  • ½ cup diced white onion
  • 3 tablespoons butter
  • 3 tablespoons low-sodium soy sauce
  • Sesame seeds (optional, for garnish)

Instructions

  1. Heat sesame oil and neutral oil in a large skillet over medium-high heat. Add chicken pieces and cook for 1 minute without stirring. Add soy sauce, butter, lemon juice, salt, and pepper. Cook until chicken is no longer pink (1-3 minutes). Transfer to a bowl.
  2. In the same skillet, heat neutral oil; sauté onion and mixed vegetables for about 3 minutes. Push veggies aside, scramble eggs until cooked, then add rice and butter. Stir frequently for about 5 minutes.
  3. Mix in soy sauce and return the chicken to the skillet. Season with salt and pepper; combine everything until heated through.
