  • 1 cup basmati rice
  • 2 medium red onions
  • 1 small potato
  • 1/2 cup cauliflower florets
  • 1 medium carrot
  • 56 green beans
  • Fresh herbs: cilantro and mint
  • Spices: cardamom, cloves, cinnamon, cumin seeds
  • Ghee and oil for cooking

Instructions

  1. Soak the basmati rice in water for 30 minutes and drain.
  2. In a heavy-bottomed pot, heat ghee and sauté whole spices until fragrant.
  3. Add sliced onions and cook until golden brown; stir in cashews.
  4. Mix in cubed potatoes, cauliflower, carrots, and green beans until slightly tender.
  5. Combine soaked rice with sautéed vegetables and whole spices.
  6. Prepare a yogurt mixture with spices and pour over the rice.
  7. Add enough water to cover the mixture; bring to a boil then reduce heat to low and cover tightly for 25–30 minutes.
  8. Fluff the biryani gently before serving garnished with cilantro and mint.
