  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper.
  3. Rub the marinade all over the chicken, getting under the skin for maximum flavor.
  4. Place quartered onion around the chicken in a roasting pan and add chicken broth.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally with pan juices.
  6. Let rest for 10-15 minutes before carving to retain juices.
