  • 3 white onions
  • 5 cloves garlic
  • 3 mixed peppers
  • 500 g sweet potatoes
  • 6 salad tomatoes
  • 500 g large carrots
  • Fresh rosemary, sage, Italian herbs
  • 100 ml single cream
  • 800 ml vegetable stock
  • Extra virgin olive oil

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Prepare vegetables (onions, garlic, peppers, sweet potatoes, tomatoes, carrots) on a baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and half of the rosemary.
  4. Roast for 30-35 minutes until tender and caramelized.
  5. Transfer roasted veggies to a large pot; add remaining rosemary, sage, Italian herbs, and vegetable stock.
  6. Bring to a boil; reduce heat and simmer for 10 minutes.
  7. Blend soup until smooth; stir in cream and adjust seasoning if needed.
  8. Serve hot with crusty bread or toppings as desired.
