  • 1 lb sausage (your choice), sliced
  • 4 medium potatoes, peeled and diced
  • 1 cup asparagus, trimmed and chopped
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil. Sear the sliced sausage until browned (5-7 minutes), then set aside.
  3. Add another tablespoon of olive oil to the skillet and sauté the diced potatoes for about 8-10 minutes until lightly browned.
  4. Stir in the onion and garlic; cook until translucent (3-4 minutes).
  5. In the prepared baking dish, layer the sautéed potatoes, onion, garlic, and asparagus. Season with thyme, salt, and pepper. Pour broth over everything and top with sausage slices.
  6. Cover with foil and bake for 40–45 minutes until potatoes are tender.
  7. Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted.
