  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small yellow onion
  • 1 cup instant brown rice
  • 1 cup low-sodium chicken broth
  • 1 can fire-roasted tomatoes (15 ounces)
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Pinch red pepper flakes (optional)

Instructions

  1. In a large nonstick skillet, heat 1 tablespoon of olive oil over medium-high heat. Add sausage slices and cook until browned (5-8 minutes). Remove and set aside.
  2. In the same skillet, add remaining olive oil, diced bell peppers, onion, basil, salt, and pepper. Sauté until onion softens (about 3 minutes).
  3. Stir in brown rice, minced garlic, and optional red pepper flakes. Cook until fragrant (30 seconds). Add chicken broth and tomatoes; bring to boil.
  4. Reduce heat to low, stir in reserved sausage, cover, and simmer for about 5 minutes until liquid is absorbed. Let rest for another 5 minutes before serving.
