  • 68 mini Persian cucumbers
  • 2 teaspoons kosher salt
  • 2 teaspoons sugar
  • 2 teaspoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers using a rolling cut technique. Place them in a mixing bowl, sprinkle with kosher salt, stir, and let sit for 30 minutes.
  2. Rinse the cucumbers in cold water using a colander to remove excess salt.
  3. In the same bowl, mix minced garlic, sugar, soy sauce, rice wine vinegar, fish sauce, toasted sesame oil, and chili paste until well combined.
  4. Add the drained cucumbers back into the bowl with the dressing and gently toss until coated.
  5. Cover and refrigerate for at least 30 minutes before serving.
