  • 2 medium zucchini (cubed)
  • 4 fully cooked sausages (sliced)
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add sliced sausage and sauté until browned. Remove from skillet.
  3. Lower heat to medium; add remaining oil and sauté zucchini, onion, and bell pepper with seasonings until tender.
  4. Return sausage to the skillet with minced garlic; stir to combine and cover briefly to meld flavors.
