  • 1 tablespoon extra-virgin olive oil
  • 1 jar (12 ounces) roasted red peppers
  • 1 cup kalamata olives
  • 1 medium red onion
  • 3 tablespoons red wine vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon honey
  • Optional: ½ cup feta cheese and fresh herbs

Instructions

  1. Lightly coat your slow cooker with nonstick spray. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then brown in the skillet for 1-2 minutes on each side.
  2. Transfer browned chicken to the slow cooker. Add chopped roasted red peppers, kalamata olives, and red onion around the chicken.
  3. In a small bowl, whisk together red wine vinegar, minced garlic, honey, oregano, and thyme. Pour over the ingredients in the slow cooker.
  4. Cover and cook on high for 1½ to 2 hours or low for 3 to 4 hours until the chicken reaches an internal temperature of 165°F.
  5. Serve warm topped with crumbled feta cheese and fresh herbs.
