  • 1 lb Italian sausage
  • 4 oz mozzarella cheese
  • 4 oz cream cheese
  • 12 manicotti shells
  • 1 lb bacon
  • Barbecue rub
  • Barbecue sauce

Instructions

  1. Allow cream cheese to soften to room temperature.
  2. In a mixing bowl, combine Italian sausage, cream cheese, mozzarella cheese, and barbecue rub.
  3. Fill the manicotti shells using a disposable piping bag or spoon with the sausage mixture.
  4. Wrap each filled shell in bacon completely.
  5. Place on a wire rack over a sheet pan and season with barbecue rub. Refrigerate for 4 hours or overnight.
  6. Preheat smoker to 250°F and smoke the shells for 1 hour, turning halfway through.
  7. Increase temperature to 350°F for an additional 15 minutes to crisp the bacon. Brush with barbecue sauce and cook for another 15 minutes.
  8. Let rest before serving.
