  • 12 full-size graham crackers
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a food processor, blend graham crackers and sugar into fine crumbs. Mix in melted butter and press into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes until golden brown and set aside to cool slightly.
  4. In a bowl, whisk together oil, sugar, eggs, and vanilla until combined. Add cocoa powder, flour, salt, and baking powder; whisk until smooth. Fold in chocolate chips.
  5. Pour brownie batter over the cooled crust and spread evenly. Bake for 30-40 minutes until set.
  6. Remove from oven, sprinkle marshmallows on top, and broil for about 2 minutes until toasted.
  7. Allow to cool for at least 30 minutes before slicing.
