  • 2 cups active sourdough starter
  • 5 cups warm milk or buttermilk
  • 12–14 cups all-purpose or bread flour
  • 1/4 cup fat (butter, oil, etc.)
  • 1/2 cup sweetener (honey or sugar)
  • 4 teaspoons salt

Instructions

  1. Feed your sourdough starter and let it rise until bubbly.
  2. In a stand mixer, combine 2 cups milk, 2 cups starter, and 3 cups flour. Mix and let ferment overnight.
  3. The next day, add fat, sweetener, salt, and remaining flour gradually while mixing until dough pulls away from bowl.
  4. Transfer to an oiled bowl and let rise until doubled (2–3 hours).
  5. Shape into loaves and place in greased pans; allow a second rise.
  6. Preheat oven to 375°F (190°C), slash tops of loaves, then bake for about 30 minutes until golden.
  7. Cool before slicing.
