  • 6 cups Italian bread (cubed)
  • ½ cup unsalted butter
  • 1 large onion (diced)
  • 4 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 2 cups chicken stock (fat-free or homemade)
  • 2 large eggs (beaten)
  • Fresh parsley
  • Poultry seasoning
  • Sage
  • Thyme
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 400°F. Grease a 9×13-inch casserole dish.
  2. Cube the cornbread and Italian bread; dry them out by leaving them overnight or baking at 350°F for about 10 minutes.
  3. In a large sauté pan, melt butter over medium heat. Sauté onion and celery until softened, then add garlic and cook for another minute.
  4. In a large mixing bowl, combine dried bread cubes with sautéed vegetables, chicken stock, beaten eggs, and seasonings. Adjust moisture as needed.
  5. Transfer mixture to the casserole dish, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 20 minutes until golden brown.
