  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1 cup sweet corn kernels (fresh or frozen)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup honey
  • 1/4 cup unsalted butter (softened)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. In one bowl, mix cornmeal, flour, sugar, baking powder, and salt until combined.
  3. In another bowl, whisk together buttermilk, eggs, and melted butter.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in sweet corn and cheddar cheese.
  6. Spoon batter into muffin tin cups until about 2/3 full.
  7. Bake for 12-15 minutes until golden brown.
  8. While baking, mix softened butter with honey for topping.
