  • 0.75 lb boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 3 tbsp olive oil
  • 1 small red bell pepper
  • 1 jalapeño
  • 1/2 red onion, sliced
  • 1 cup uncooked rice
  • 1 cup black beans (drained and rinsed)
  • 4 large tortillas
  • 1/4 cup cotija cheese

Instructions

  1. Marinate diced chicken in olive oil, lime juice, and spices for at least 15 minutes.
  2. Cook rice according to package instructions.
  3. In a skillet, sauté marinated chicken until cooked through (about 12–15 minutes).
  4. Sauté chopped vegetables in the same skillet until tender; add garlic last.
  5. Assemble the wrap by layering rice, chicken, veggies, beans, corn, cheese, and sauce on tortillas.
  6. Wrap tightly and serve.
