  2. Cover dough and let it rest for 30 minutes.
  3. Perform four sets of stretch and folds every 20 minutes over the next hour.
  4. Allow dough to bulk ferment for 3-4 hours until nearly doubled in size.
  5. Shape the dough into a tight ball and place seam-side up in a floured basket. Let rise for another 2 hours.
  6. Preheat oven to 460°F (238°C) with a dutch oven inside during the final proofing hour.
  7. Score the dough and carefully transfer it to the hot dutch oven. Bake covered for 30 minutes, then uncover and bake an additional 10 minutes.
  8. Cool on a rack for at least one hour before slicing.
