  • 1 block extra firm tofu
  • 1 batch cilantro lime rice or Vegan Mexican Rice
  • 1 red pepper
  • 1 orange pepper
  • 1 can black beans
  • 1 avocado
  • 1 batch spicy tahini dressing
  • 2 tablespoons sriracha
  • 1 tablespoon olive oil
  • 3 tablespoons corn starch or arrowroot starch
  • 12 teaspoons coconut sugar or brown sugar
  • 1 teaspoon paprika
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon chili powder
  • ½1 teaspoon salt

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Remove the tofu from its package and drain any excess liquid. Place it between two towels and put a heavy object on top. Let it press for 5–10 minutes.
  3. Combine coconut sugar, corn starch, spices, and salt in a mixing bowl.
  4. Chop the tofu into cubes and place them in a large mixing bowl.
  5. Mix together olive oil and sriracha in a small bowl. Pour half over the cubed tofu and toss lightly.
  6. Sprinkle the spice mixture over the tofu cubes until they are well coated.
  7. Line a baking sheet with parchment paper. Spread the coated tofu on one side and prepare chopped peppers on the other side.
  8. Drizzle olive oil over the peppers and add a sprinkle of salt.
  9. Bake in the preheated oven for 20 minutes. Afterward, brush remaining sriracha mixture onto tofu cubes.
  10. Continue baking for another 10–15 minutes until tofu is crispy and peppers are soft.
  11. Assemble each burrito bowl starting with cilantro lime rice, then top with black beans, roasted peppers, crispy tofu cubes, sliced avocado, spicy tahini dressing, and optional salsa.
