  • 4 romaine leaves
  • 1 cup shredded cabbage
  • 2 carrots, shredded
  • 1/2 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 avocado, thinly sliced
  • 1/2 cup fresh cilantro
  • 1/3 cup peanut butter
  • 2 tablespoons tamari (gluten-free soy sauce)
  • 2 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 1 tablespoon sriracha
  • 1 tablespoon fresh ginger, minced
  • 1 garlic clove, minced

Instructions

  1. Prepare the peanut sauce by whisking together peanut butter, tamari, lime juice, maple syrup, sriracha, ginger, and garlic until smooth. Add water for desired consistency.
  2. Moisten a sheet of rice paper in warm water until soft, then lay it flat on a towel or cutting board.
  3. Layer one romaine leaf and your choice of shredded vegetables and herbs at the bottom of the rice paper.
  4. Roll tightly from the bottom up, tucking in the sides as you go.
  5. Repeat with remaining ingredients and serve immediately with peanut sauce.
