  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup sugar
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon extract
  • 1/3 cup fresh lemon juice
  • 1/2 cup vegetable oil
  • 3/4 cup plain Greek yogurt
  • Zest of 1 lemon
  • 3 tablespoons butter, softened (for icing)
  • 1 1/2 cups powdered sugar (for icing)
  • 3 tablespoons lemon juice (for icing)
  • 1 teaspoon lemon extract (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and instant lemon pudding mix.
  3. In another bowl, beat eggs with sugar until light. Add butter, vanilla extract, lemon extract, fresh lemon juice, oil, and Greek yogurt; mix well.
  4. Gradually combine dry ingredients with wet ingredients until just mixed. Stir in lemon zest.
  5. Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Let cool in the pan for 5-10 minutes then transfer to a wire rack to cool completely.
  7. For icing: Beat softened butter with lemon juice and gradually add powdered sugar until smooth. Spread over the cooled loaf.
