  • 2 boneless ribeye or sirloin steaks (about 6 oz each)
  • 12 oz pasta (spaghetti, fettuccine, or your choice)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • ½ cup beef broth (optional)
  • ¼ cup fresh basil or parsley, chopped (for garnish)

Instructions

  1. Boil a large pot of salted water and cook pasta until al dente (8–10 minutes). Reserve ½ cup pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Season steaks with salt and pepper. Sear for 4–5 minutes per side for medium-rare. Let rest before slicing.
  3. In the same skillet, reduce heat to medium and add butter and garlic; sauté for 1–2 minutes until fragrant.
  4. Stir in beef broth if using, simmer for about 3 minutes. Add heavy cream and whisk in Parmesan until thickened.
  5. Toss cooked pasta into the sauce, adding reserved pasta water as needed to adjust consistency. Fold in sliced steak and garnish with fresh herbs.
