  • 8 ounces strawberries (hulled and chopped)
  • 1 avocado (chopped)
  • 2 ounces crumbled goat cheese
  • ⅔ cup sliced almonds
  • 3 tablespoons sugar
  • ½ cup olive oil
  • 3 tablespoons champagne vinegar
  • Juice of ½ lemon
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove (grated)
  • Salt and pepper to taste

Instructions

  1. In a nonstick skillet over medium heat, caramelize the sliced almonds with sugar for about 6 to 8 minutes until coated. Transfer to parchment paper to cool.
  2. In a large bowl, combine arugula with salt and pepper. Add strawberries, avocado, goat cheese, and cooled almonds.
  3. For the dressing, whisk together champagne vinegar, lemon juice, honey, Dijon mustard, garlic, salt, and pepper in a bowl. Slowly add olive oil while whisking until emulsified.
  4. Drizzle dressing over the salad mixture and toss gently. Serve immediately.
