Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar for strawberries
  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter, melted
  • 6 large crepes or thin cake layers

Instructions

  1. In a bowl, combine softened cream cheese, sugar, and vanilla; mix until smooth. In another bowl, whip heavy cream to stiff peaks and gently fold into the cream cheese mixture.
  2. Toss diced strawberries with sugar and let them sit for 10 minutes.
  3. Mix crushed cookies with melted butter until they resemble wet sand.
  4. Lay a crepe flat and spread cheesecake filling over it. Sprinkle shortcake crumbs and add strawberries near one edge. Roll tightly from the strawberry edge to create a sushi roll shape.
  5. Wrap each roll in plastic wrap and chill for at least 1 hour before slicing into pieces.
