  • 1 cup old-fashioned rolled oats
  • 1/2 cup oat flour
  • 1/2 cup dried fruit (cranberries or raisins)
  • 1/2 cup pumpkin seeds
  • 1/4 cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1 large mashed banana (or applesauce)
  • 3 tablespoons melted coconut oil

Instructions

  1. Preheat oven to 325ºF (160ºC) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine oats, oat flour, dried fruit, pumpkin seeds, flaxseed, chia seeds, cinnamon, baking powder, and salt.
  3. Stir in the mashed banana (or applesauce), melted coconut oil, liquid sweetener, and almond milk until well combined. Let the mixture rest for 4–5 minutes.
  4. If too thick, add an extra tablespoon of milk. Use a scant 1/4 cup to scoop cookie dough onto the baking sheet; flatten slightly.
  5. Bake for 15–18 minutes until edges are lightly golden. Cool on the baking sheet before transferring to a wire rack.
